Bread flour is milled primarily from hard red spring wheat, resulting in a high protein content that typically ranges from 12.5% to 14%. This elevated protein level is crucial for yeast-leavened doughs. When hydrated and kneaded, the high concentration of glutenin and gliadin creates a strong, elastic gluten network that is capable of trapping gas bubbles released by yeast. This gas retention allows the dough to rise high and maintain its structure, yielding a chewy crumb and a thick, crispy crust. Bread flour also absorbs more water than lower-protein flours, meaning doughs made with it require slightly more hydration to reach the same consistency.

Because of its high gluten potential, bread flour is ideal for structural breads, bagels, pretzels, pizza crusts, and laminated doughs like croissants. However, it should be avoided in recipes where tenderness is the goal, such as cakes, biscuits, and pie crusts, as it will make them tough, dense, and rubbery. When substituting, bread flour can be replaced with all-purpose flour, but the resulting bread will have a softer texture, a less open crumb, and a slightly lower rise.

Common mistake

Using bread flour in tender cakes or pastry crusts. The excess gluten development makes the batter elastic and tough, resulting in rubbery cakes and tough, chewy pie crusts.

US vs UK / Metric

In the UK, this is sold as Strong White Flour. In Canada, standard all-purpose flour has a naturally high protein content (around 13%) and can often be used in place of bread flour.

When to use it

Use for yeast-risen breads, bagels, pizza dough, pretzels, artisan loaves, and sourdough baking where maximum chew and structure are desired.

Replace 1 cup bread flour with 1 cup all-purpose flour + 1 teaspoon vital wheat gluten.

Storage tip

Store in an airtight container in a cool, dry pantry for up to 6 months, or freeze for extended storage.
