Slow Bake
Cover the pot and transfer to the oven. Bake for 1 1/2 hours, stirring every 30 minutes.

Season and Serve
Remove from the oven. Taste and season with salt and pepper. Let rest for 10 minutes before serving. The sauce thickens as it cools.
