White Whole Wheat Flour

White whole wheat flour is a 100% whole-grain flour, but it is milled from a different variety of wheat than traditional whole wheat flour. While standard whole wheat is milled from hard red winter wheat, white whole wheat is milled from hard white spring wheat. Because white wheat lacks the dark bran pigment and bitter tannins (phenolic compounds) found in red wheat, the resulting flour has a lighter color, a milder flavor, and a natural sweetness. This makes it an exceptional tool for home bakers who want the nutritional benefits of whole grains (fiber, protein, and vitamins) without the strong, hearty taste and heavy texture associated with red wheat.
Chemically, white whole wheat flour behaves similarly to traditional whole wheat.
